Farmer John's Favorite Pumpkin Pie Squares

Crust:

  • 1 Cup Flour
  • 1/2 Cup Quick Rolled Oats
  • 1/2 Cup Dark Brown Sugar, firmly packed
  • 1/2 Cup Butter

Filling:

  • 1 lb. can Pumpkin
  • 13 oz Evaporated Milk, not condensed milk
  • 1 Large or Extra Large Eggs
  • 1/2 Cup Granulated Sugar
  • 1/2 tsp. Salt
  • 1 tsp. Cinnamon
  • 1/2 tsp. Ground Ginger
  • 1.5 tsp. Ground Cloves
  • 1 tsp. Pumpkin Pie Spice
  • 1.5 Cup Chopped Walnuts or Pecans
  • 1/2 Cup Dark Brown Sugar
  • 2 Tbsp. Butter

Method:

Combine: flour, oats, 1/2 cup brown sugar, & butter. Mix until crumbly. Press into ungreased 13 x 9 x 2 pan. Bake @ 350¾ for 15 minutes.

Combine in mixing bowl: pumpkin, milk, eggs, sugar, salt & spices. Beat well. Pour onto crust. Bake for 20 minutes.

Combine: nuts, 1/2 cup brown sugar, and 2 tbsp. butter. Sprinkle over filling. Return to oven and bake 15 to 20 minutes more or until filling is set.

Cool in pan. Cut into 2" squares. Serve with whipped cream.
